Zander on the skin crispy fried salmon fillet

The description is less to be understood as a recipe, but it should be a guide for fish fillets and fried crispy on the skin side. The development of a skin chip I described once before for a Halibut.

pike perch, Asian cucumber salad

perch fillet, celeriac puree, sugar snap peas

So , pike perch in this case. In my opinion this is a wonderful Fish with a beautiful skin. Which is one of my favorite fish. Sure, the description will work with any other fish fillet with skin as well. It even gluten-free - that later.

Zander crispy fried on the skin:
pikeperch
unflavored canola oil or other vegetable oil
sea salt
sugar
flour
Fleur de Sel
black pepper

The fish fillet with a paper towel pat dry. The skin-side control of dandruff. If scales are still present (the remains of poorly flaked fish) removed.

the fish bones on the flesh side to check. This one just drive along with the hand on the flesh side. The bones in the middle with a bone forceps, a normal tweezers, pliers - Remove no matter what. Should also be even fish bones on the side (do not stand so upright, but are rather flat), it is better to drive with such a thin knife and cut away.

The fish fillet then turn on the flesh side and cut into serving sizes. The skin cut several times. Heat the oil in a nonstick pan.

the fish pieces on the skin side with sea salt and some sugar to taste. Some flour on a plate, are fueling the circular plate to distribute the flour surface. The seasoned Fish pieces with the skin side to give the flour. Then tap off the excess flour. It should be dusted with flour really just tender.

the fish pieces with the skin side in the hot pan. The fish fillet pulls together now and bulges, and because of watery areas of the skin, because they are not fried. So, the fish must be pushed down. This can be done by hand with a spatula, or simply place a small pot on it. After a short time spans the skin and it is no longer a danger of an arch. Now the fish fry perfectly to the skin.

Once on the edge of the fish meat shows bright spots, the flesh side also Season with sea salt and some sugar. And turn the fish and fry on the flesh side.

Anyone who is unsure can, lift the fish with a spatula and feel that the skin is already crisp. Ideal for frying is a medium temperature. the fat is too cool, the skin is not cooking properly, the fat is too hot, burns the skin.

in celiac disease:
You can also cook the fish with gluten free flour. The processing is identical. Here you just have to be careful that the flour coating is very thin. The fish is not quite as crisp as with normal flour. But, it is very easy to achieve a good result, the guests also can serve without celiac disease. I eat it too, even if I have to give up gluten.

Review: My herb garden - Johanna Wallmann

This charming book by Joan Wall art will delight garden lovers with a strong sense of everything beautiful. Touch me and inspire the many pictures because the photographer takes a decidedly affectionate glance at the objects, while he scans.
The book is in two sections:

My herbalism
My favorite herb

Wallmann writes very personally when she begins her book with the words: "Herbs are for me associated with childhood memories : lovage in my grandma's vegetable soup with plantain the insect bites have been rubbed off, and woodruff punch, which I owe my first tipsy. My very first garden was tiny, and I planted lots of herbs, because they looked so beautiful as flowers and relieve the same time my student budget "(quote p. 9).
the author on its journey through the land of paradise herb gardens with a historical demolition and allows the reader to know that cumin has been used in the Stone Age and wrote the Greek physician Dioscorides in the 1st century BC wide range of cultural applicability and descriptions for over 500 medicinal plants, (see: p. 10). Crusaders are to be borage on the harness and the Stirrups are tied because they were convinced that this promotes courage. As part of sketching the medieval monasteries, gardens, of course, is the Benedictine abbess Hildegard of Bingen (1089-1179) to the language and its world famous herbal treatises.

superstition and forbidden knowledge will be discussed here are also women's and men's herbs take a close look. Men, the smell of clary sage, should have appeal to women. A naked, handsome man, who sleeps in a Muskatellersalbeibeet, will certainly not from interested women can save, I guess, if you believe the information must pay. :-)) Are covered
In

herbs in a small space, and here is the herb spiral highlighted as the ideal solution. How to create herb spirals, is explained very well and one can well understand the steps in pictures. to plan an herb garden is easier than you think. This shows the remarks. Sowing and prefer is not difficult. Site and care of herbs know the author to provide more helpful, even for balcony gardeners who should care for their culinary herbs in containers on a sunny or shady place.

Johanna Wall husband calls her favorite herbs, which include the lady's mantle. For each herb it reveals it describes facts, its cultivation and harvest what you taste in this context, and good for you. The essays touch on the favorite herb next to the lady's mantle, chives, garlic, dill, angelica, chervil, tarragon, borage, calendula, caraway, coriander, arugula, fennel, Woodruff, St. John's wort, juniper, laurel, lavender, cress, lovage, mallow, chamomile, lemon balm, mint, catnip, basil, marjoram, oregano, parsley, rosemary, sorrel, sage, savory, dandelion, thyme, nasturtium and valerian.

St. John sees not only pretty from when it blooms, it also relieves nervous disorders and gloom lows. The author comes up with a related recipe that helps with bruises and sprains. Even marigolds find another against feelings of depression. But here it is the color that lightens the mood.

We learn how to dry herbs and freeze, even how to make a cough syrup produced from herbs and how to make lavender sachets decorative. Herbs Jewelry is an issue, but also face masks and, finally, we even learn how to build a herb rack itself.

"Let it go well!" recommends inter alia, declared the author and which herbs which help to combat tension and gloomy mood. I let my gaze linger long on the nasturtium, whose color gives me a good mood. Good mood given me but basically the entire book that inspired me this week to be planted terracotta pots with herbs and indeed with thyme and marjoram, and sage of the flavors because with mint and rosemary, of course, with beans, cabbage, the potato soup is a great flavor adds.

recommended.

Review: Gardening is a passion-Anja Maubach.

The author Anja Maubach and Ferdinand Graf von Luckner have for the present, richly illustrated garden book "GARDEN IS PASSION wins the German Book Prize will receive 2011 in Garden of the picture book category. But first my congratulations.

mE Readers should first let the really successful pictures of the photographer Ferdinand Graf von Luckner act on them because the images have earned it, that one gives them attention. Worth it have to be assessed and the well-written articles from within a woman Maubach review them adequately. In many images the way we see the studied landscape architect, the 4th in the Generation of one of Germany's oldest garden perennials leads, while gardening. These images demonstrate that this requires no theorist, but a sympathetic, practical assessed woman who is very earthy.

The book is divided into:

- principles from the beginning, practical and useful

- plant knowledge for every gardener

- Design - The Basics

- The Art of flowerbeds

- Life in the Garden - Day after day

- garden design - the high school

- Gardening with all your senses

- passion for gardening - no personally

Maubach added at the edge of the parts of the text again and again items which says a lot about their thinking. Before I began to read their texts, I considered myself not only the garden pictures, but watched the energetic horticultural designer at digging, hoeing, plant, critical testing of Erdqualität, in sowing, etc. and also read it selects items to get an idea to get their attitude. Here can be found on page 19 a sentence by itself, which says, "The garden will think about what we do." Right. I would add, the garden makes our feelings visible, shows whether it is varied and colorful or rather sad and depressed.

Maubach philosophize about it first, in what way you take an empty garden, or an existing one in possession and give him a personal note can. Digging for "Maubach one of the oldest ways to carry on reclaimed land, (see: p.29) In this activity you can see how it is ordered to the ground, whether it stony, humic, compacted, loose, with many earthworms. is provided and has a good crumb structure, (see: p.29). The author maintains that the digging was for the gardener about what was for the painter the bottoming with a new screen, (see: p.29). This comparison has fallen to me as it is almost poetic. Oh, and another thing ...: below the respective texts, there are always valuable advice that begin with the words "begin with".

In their reflections on compost, I stumbled over two sets of me at first somewhat confusing: "I am holy compost is why he is also from time to time by a scented incense.." (Quoted p. 31) These rates I had to old rituals reconsider as mother goddesses were worshiped.

that sowing the green thumb at school, my mother and said that one should take when seeding the lunar calendar to hand, she always says. Seeding is actually a sacred act, if you do not do the practical to the spiritual background forget. Anja Maubach, as it would express my best friend, loving, spiritual way "and that spirituality permeates the entire book, with which it is, intentionally or unintentionally against all women, who were concerned in the past with white magic respectful bows.

For Maubach, the earth and the plants are animated. HOW TO concluded even sentences such as "Watch your plants you will to see whether they feel comfortable and develop optimally. If you have the feeling they are hungry, do not hesitate then to fertilize. With sensitivity (..). . (Quote p. 37).

water is also sacred Maubach. She watered her garden, because the plants are otherwise comfortable. I am amazed. When propagating it presupposes that one sensed in advance the secrets of plants and guessed, when can the plants grow best. Here, according to Maubach asked the green thumb (see: P. 41). Says my mother ever. :-))

The author expresses that cutting is a lavender field, a good exercise on the way to a good teacher and reported what they cut in the garden, and what does the cutting, (see: p.45) . While reading, I always look at photos showing Anja Maubach in her brown garden apron. Here I particularly like how they reverently sprinkled seeds into the ground. (See p.49).

One learns little later, that plants with stories to tell about their origin and appearance and what is it with the genus name to be added, (see p. 51-53) "aizoon" way, stands for evergreen and "cordata" for heart-shaped.

to the basic organs of the plants, talk about their roots, white Maubach Kluge's report to philosophize also about the variety of colors, shapes and textures of leaves, and finally she knows about the "flower miracle" and also pays homage to they expressed their thoughts of mother nature that brings so much beauty. Your love is the perennials. Her great-grandfather has addressed in his company that he founded in 1888, already with perennials. It defines perennials as follows: "Perennials, the underground overwintering buds form from which they sprout in the spring again. "(see: p. 65)

Maubach speaks out on grass, it refers to as antennas between earth and heaven, describes her look at the" bulb-Theater .. "and enthusiastically reported by the passion of plants collected before they philosophize about the entrance of the garden The garden philosophical bays make the book so appealing, the author points out, however architecturally to know to make living spaces outdoors, (see: 81 - 83).

She writes about borders and subtitled "set boundaries and enclosures." So it shows that they are an important psychological assumption below, but you also know that the height of the border is critical. Openings provide insights in the garden, but also prospects. What the individual gardener would depend, presumably from his mental pattern.

It is impossible within the framework of the review to discuss all ideas Anja Maubach. Its considerations with regard to the kitchen garden and the herbaceous border art, here it refers to the English garden artist Gertrude Jekyll (1843-1932) to create, I found very enlightening.

The favorite chapter in the book to me is one in which Maubach be involved in creative combinations. Her credo is "bold colors!. Not just for Maubach, colors are stimulating for me and I dedicate myself to enjoy the study of color. The author has is joy in the interpretation of color, form and nature of artists like Klee, Itten, Monet and Turner, and these interpretations in order to garden design ideas. She deals with the colors yellow, blue, pink, white, green, and their vegetable display and writes at one point, the Novalis would please certain: "An indescribable bright blue dream remains that of Meconopsis betonicifolia", the Himalayan poppy. Again and again I lose myself to the temptation to "Meconopsis" make right - but the Himalayas, with its fern gullies is far away, "(quote: S 121).

Maubach also writes about Monet and his garden, can the reader know which plants the painter would probably order today and also called for a variety of plants so-called Malkastenbeet. Then think the landscape architect including on lunch break, evening magic of spring, summer mood, autumn fires and winter rest after. On the edge of their relevant considerations, I found a sentence of Elizabeth von Arnim from 1898, which is so nice that I like give back, "Oh, I could rejoice with joy and dance that spring is here! This revival of beauty in my garden and bright confidence in my heart. "(Zitat. p. 143).

Harmony and Golden Section" is a subject. Here the author cites Meyers and lists the general rules of proportion, (see .. p. 155) She then looks at the idea, that arranged pattern of the garden, shows how to model terrain and created a rock garden greenhouse exotic, creative pot gardens and temporary Gardening Ideas do not remain left out, as well. not the message that you should feel a garden. One can, if one has no garden gloves and walking barefoot or just a little on the grass lays. I love it this way, the garden feel, to ground me.

The scents and sounds of the garden should absorb it and you should be open to special places in the garden, you should understand as holy places and kiss Mother Earth in deep intimacy and connection, (see: S. 195).

The declarations of love Anja Maubach in terms of "Euphorbia", "Allium balls and silver candles," one should carefully read and delve into the language of flowers. A wide sage band is actually a symbol of grace. Maubach has planted it and year after year is blessed with beautiful flowers. grace you have to obviously work out.

A great book that is far more than just a guide and got right to a prize.

Review: handmade gifts from the garden itself

The author Claudia Költringer, together with photographer Anne Kompatscher a beautiful, richly illustrated book on track, by the them to instruct their readers create gifts from the garden.

The book is arranged under the headings:
delicious gifts from the garden
nurses gifts
herbal portraits

The delicious gifts they then divided again into:

liqueur and brandy
sweet treats
tea
vinegar, oil and Co.

The preparation of these gifts is explained very well. One learns, for example, make their own liqueurs. In the liqueurs are delicacies such as "Dandelion orange liqueur, rose petals and raspberry liqueur, elderflower liqueur" or "plum-cinnamon liqueur. The latter is a old family recipe. The liqueur is my opinion as gifts during the winter months because the flavors of the cold season are appropriate. Cookies and chocolate, in which the garden is mirrored, you learn to cook well. Here I like the "violet" chocolate "very good, which is a nice gift in the spring time, an almost romantic look-Border gift if it is packaged as proposed by the author it.

Well I like the honey-creations, that is the vanilla honey and rose honey, which are in the glass is a real eye-catcher. In addition to some tasty jams I like the tea and mulled wine spices very well. The Bratkartoffelgewürz I have made myself a present, but cheated a little dried garlic underneath. The mixture is managed in taste.

friends of the Mediterranean diet is certainly looking forward to "flowers herb salt" as a gift at a dinner invitation, especially when you present this beautifully packaged. A "Herb Butter spice" is the ideal gift for a barbecue on which can sometimes give quite a "rosemary-chili oil.

are very decorative glass bottles with "cinnamon with orange" or "Rose flower vinegar with fresh raspberries and a highlight I see in the" tomato Bärlauchrelish " which is made from tomatoes, red wine, sugar, citric acid, garlic, pepper, thyme and oregano leaves. The author sees the Relish an interesting accompaniment to meat. But I think that the Relish also fits very well with cream cheese.

The caring gifts me the recipe for "Marigold soap" has fallen, and I must admit that I would lack the nerve for the preparation of soap. It seemed more likely I would establish the Ringelblumenalbe that will help with minor skin injuries. Handsome looks a handmade cherry stone pillow that you should use for stomach pain.
I would like to commend mention the 24 herbs portraits. You learn details about each focused herbs that play a role in the gifts. Description, location, flowering, harvest and use will be addressed, so that the recipient about what to expect health can explain well.

Give her dearest friend, a "honey cream bath cream. You will be happy after a hard day.

Window boxes are covered, and also their support and it addresses the question of whether the more appropriate boxes inside or outside mounts. What is the perfectly designed from a balcony box? Then to find an answer is not simple, because of course in plant site selection is important.

The author lists possible combinations of colors and texture of plants, specifically, with overhanging, bushy and upright habit and is in extensive review of growth and harmony of color. Countless examples of planting flower boxes are also described and visualized. I especially like an arrangement of yellow and orange shrub African Daisy, and ducat coins, gold and orange lunch magic bells. review: Garden Design - Principles and Practice

Barbara Resch addresses the beginning of their very informative, rich garden book, illustrated with a small garden style story in which it formal to the architectural, treats the Cottage and the natural garden in detail . I am currently minimalist garden particularly excited because they are limited to the essentials and provide a place to relax, functional and easy to care are, have a clear, geometric forms and an orderly planting have, (see: p.18-21) . The Author presents different planting methods for the minimalist garden, and we learn among other things, that one of Europe's most famous landscape gardener of postmodernism, Dieter Kienast (1945-1998), inspired the design of its parks and gardens of the abstract art of minimalism was. The movement of the minimal art is for art direction, which is characterized by objectivity, clarity and reduced geometric shapes, (see: p. 20).

course, I also like cottage gardens and romantic but the design and flowers for. In connection with these gardens, one reads about Gertrude Jekyll (1843-1932), whose reputation as a famous Garden of England artist reverberates today. You learn the design principles of the cottage garden know learns of the significance of the roses and vines in such gardens, in order to then deal with natural gardens and the concept of sustainability possible.

are detailed in the following the golden rules explained in the garden design that are called:

Rule 1: a line to create the environment
Rule 2: a relationship to the style of the house make
Rule 3: Make the principle of Yin and Yang
Rule 4: Planning with the season
Rule 5: the Golden Ratio note
Rule 6: law of symmetry and asymmetry
Rule 7: create garden spaces
Rule 8: towards designing harmonious
Rule 9: Plants combine harmoniously
(For details, see pages 42-65)

Very enlightening way, are the descriptions of Yin and Yang, along with the basic idea Feng shui, which I been able to gain a lot and they have tried for years not only in the garden implement.

The author shows how to plan a garden reasonable. She locates from the positions, and plans with the compass, to know writes to the soil types and explains how to improve the soil. Focuses on compost, minerals, lime and mulch. About neighbor right to be informed. Here, they concern the overhanging branches, fence and property line, etc. (read more on p. 80ff).

is further shown how to create garden plans and what you need this and it explains how a concept plan is designed gradually garden a reality. Three drafts of a garden as you get to know and also examples of different gardens, including small gardens, roof gardens, long and narrow and wide gardens. Then you learn to build a dream garden. What materials are needed and to what protective equipment is needed for the garden site, one can read in detail. It will even be informed, how to lay drains, (more on page 133).

From page 136 we learn to plant a nice garden to make. The essays are: trees, shrubs, grasses, ferns, bulbs and tubers, summer flowers. This gives a very good overview of all these plant species and can look more closely at the color wheel and deal in this regard with warm and cool colors. Teaching is one of color combinations, gradients and color contrast, reading of general information on planting opportunities, such as the gravel bed and the traditional perennial border.

Chapter garden design will be taught to build walkways, pergolas and to erect fences to lay grass to plant hedges and trees and flowers to create a meadow or a pond, u.sw.. After all, one is even aware of garden furniture, even the artistic perfection of the garden is not spared by sculptures.

for all gardeners and those who want to be, the book is an asset. I recommend it with pleasure and joy.

Review: Small gardens in the city

This lavishly illustrated, very well structured garden book author and photographer Martin Schröder Ute Klaphake have been launched.

Presented are 16 different garden styles, is made by means of which a very small space big. Schroeder lets the reader know that the trend of today's urban gardens to smaller areas. Not infrequently, the size is larger than 100 square meters. Here have terrace, patio, privacy, play area for children, ornamental and vegetable garden will be located (see: p. 9).

For each type, the best solution available, it should be clear to all that small gardens require smart solutions. The author recommends not only the area that offer the garden, use, but also the height of the pergolas, shelves and hanging plants. By sophisticated garden space allocation affects the garden optically accessible long-range. Raised and sunken garden is an exciting, useful complement to earthy beds. These new perspectives of the small garden is more varied. By means of pot plants you can use tiny corners sense. In large vessels are different herbs, perennials superb, beautifully cut Paper, roses, etc. housed, (cf:. 11).
You get to know creative beds in the front yard, but perfectly formed front yards, leaving little room for experimentation. Topiary trees are able to provide the difficult balance between peace and vitality and are therefore considered of unbroken Stylistic devices in the design of formal gardens, (see: p.23). Excited me a string of pearls from an Rasenweg balls, but the beech trees on stainless steel bucket. To topiary trees and shrubs also fit herbs very well. On page 25, some are called.

Delightful I find the garden with mini trees, (see page 26) and those who make do with little shades and reduced forms. In this context, architectural plants are introduced, such as yellow variegated Japanese grass and shrubs, such as sheet and plate Funkie. Bright marble slabs vary with black gravel strip, small pools may play a role.
like very much to me in Orange landscaped garden, its luminous color corners look very warm and call for companionship. Mini Flowery solutions are also presented, and of course romantic gardens that provide by delphinium, gypsophila and bluebells for atmosphere. Very beautiful is the garden, charmed by an abundance of grasses, but also to rocky streams in the smallest space, surrounded by ferns funkier and superb spars.

My current preference is for Japanese gardens, so I am particularly impressed by the exemplary azalea garden. A pond is created there and a stone landscape provides tranquility.

The book is really very inspiring. Recommended.
